How should in introduce my 7 and a half month old baby to chunkier food?

I started weening my daughter at 5 months on 4-6 months cow and gate baby food jars and she took to it well. She I now 7 and a half months old and I'm trying to introduce her to 7+ months baby food jars, which has more chunks. The problem is she gags whilst eating it and after a couple of spoonfuls she's gone off and just cries.
